This wine is the last in my 20+ year adventure with "Topaz" and botrytised Sauvignon Blanc and Semillon. I am totally surprised I have kept the vision going this long. Never in my wildest dreams did I ever think I would craft wines of this caliber.
The 2007 is the only 100% Semillon bottled. The grapes come from the "Osborn Vineyard" in Sonoma County's Alexander Valley. I also picked from this property in 2004. Most excellent grapes, 4.2 tons @ 42° Brix, (DLX level). Barrel fermented and aged 17 months. (40 % new oak).
The wine is lusciously rich and unctuous with flavors and aromas of orange blossom, buttered cinnamon toast, and apricot jam. Balanced by the fresh acidity the finish just keeps on keeping on.
The finished wine has 17.3 % residual sugar, 8 grams per liter of acidity, 3.82 ph and 14.8% alcohol.
